Greek Salad with Chicken and Feta

Title: Greek Salad with Chicken and Feta

I could eat this salad literally everyday. Its light and fresh, but so filling and satisfying. Be prepared to have this salad as your next favorite salad in your weekly meal rotation. 

Ingredients

Romaine lettuce, washed and thinly sliced
3 to 4 green onions
1/4 cup to 1/2 cup feta cheese
1 cup of diced cilantro or dill
1/4 cup lemon
1/4 cup olive oil
salt and pepper to taste

3 chicken breasts, sliced
smoked paprika
thyme
salt
pepper
olive oil

Instructions

  1. Begin by slicing your chicken and sprinkling on the smoked paprika, salt, garlic and thyme. In a large pan, add olive oil and let it get hot. Add the chicken until its brown on one side, flip. Its done when there is no pink left in the middle and the temp is 160F
  2. Next slice your lettuce into thin slices. Wash it in a salad spinner. Make sure its dry completely. Crumble in your feta. Add in your sliced herb(s). Slice and add your green onions. Sprinkle salt and pepper over salad
  3. Make your dressing: lemon +olive oil. Drizzle it over the lettuce (about 3 tbsps’) Mix it all together. Add your chicken on top and serve with love and joy!!

Saving Money:

Buy your chicken in bulk. I love ordering from a quality service called @butcherbox. Also buy your feta in bulk from bulk barn!  This meal is already super budget friendly! (You can even leave the chicken off, not necessary. You can sub for chickpeas instead if you would like :))

TIPS

Store the extra salad dressing in a mason jar in the fridge to have another salad the next day.

This is packed with dietary fiber which is excellent for gut health. It is also filled with omega 3s which is powerful brain food that increases learning, memory, cognitive well-being, and blood flow in the brain. 

Saving Time:

When you get home from the store, slice and wash your lettuce right away!  Then store in fridge in closed container with some paper towel. It will last longer and be ready for you to use when its time for dinner.
