Ground Chicken Taco Bowls

These were whipped up in 20 minutes and the whole family wanted more. It is also super filling, being so protein packed, that all of us were satisfied until the next day. We hope you enjoy this super nourishing and simple taco bowl!!!
Ingredients
1 lb ground organic free range chicken
1 red onion (thin sliced and thinly diced)
Spices:
1 1/2 tsp Chili powder
1 tsp cumon, ground
1/2 tsp smoked paprika
1/2 tsp salt (+ 1/4 tsp once done cooking)
1/2 tsp garlic powder
1/4 tsp oregano
1/4to1/2 tsp black pepper
Salad Dressing:
2-3 tbsp olive oil mayo (or plain greek yogurt)
1/2 lemon, juice
1/2 tsp maple syrup
Toppings:
Romaine Lettuce
Spinach
pickled onions (from above red onion + vinegar + salt +sugar)
white cheddar cheese
tomatoes, diced
cilantro, optional
jalapenos, pickled – optional
tortilla chips, optional
Instructions
- Mix all spices together in a bowl and set aside
- Whisk salad dressing together in a small bowl, set aside
- Sautee ground chicken in pan, once almost cooked add 1/2 of a red onion, finely diced and ALL the spices. Let cook for another 5 minutes or so until onion soft and caramelizy. Set aside.
- Meanwhile, slivce the remaining half of red onion and place in a small mason jar. Fill up jar with just enough vinegar to cover the onions. Add 1 tsp sugar, 1/2 tsp salt and set aside.
- dice up or shred all your toppings and place in separate bowls, so everyone can make their own taco bowls the way they like
- I add romaine and spinach to my bowl and top it with the salad dressing. Then I add the pickled onions, white cheddar cheese, diced tomatoes, jalapenos if using, top with a bunch of ground chicken and finish with crumbled crispy tortilla’s if you desire.
Saving Money:
Most of these ingredients are simple to have on hand at all times. The ground chicken is probably the most expensive. I recommend looking into pastured turkey / meat that is local to you. They will often have sales and when you meet the butcher, store or farm owner it makes the process of paying for higher quality meat worth it in nutrition and in relationship. The little extra money you put out by doing this it is going towards supporting ethically raised animals and loving farms.

Saving Time:
Use as few of toppings as possible. Romaine lettuce, pickled onions and cheddar cheese is superb.
