Healthy-ish Banana Chocolate Chip Muffins

Title: Banana Chocolate Chip Muffins

Serves: 24 mini muffins

We have officially found our favorite, moist and delicious muffin recipe!! Be sure to double it and freeze some.

Ingredients

2 eggs 
1 flax egg (or one more egg)
3-4 ripe bananas, mashed
1/4 cup melted coconut oil
1/2 cup coconut (or brown) sugar
1 tsp vanilla
1/2 tsp pink salt
1 tsp baking powder
1 cup flour (0rganic all purpose white, coconut or almond flour)
1/2 cups oats
1 cup chocolate chips + some for the top

 

Instructions

  1. Preheat Oven 350F
  2. In a large bowl mash the bananas
  3. Add the vanilla, coconut oil, coconut sugar, eggs
  4. Mix in the flour, oats, baking powder, salt. Mix thoroughly
  5. Add chocolate chips. Mix. 
  6. Use mini muffin tips, or medium muffin tins, either add in muffin liners or add butter/oil in each cup and then sprinkle with flour, ensuring it covers all sides and then dump the rest of the flour in sink/garbage.
  7. Add a few extra chocolate chips to the top of each batter
  8. Pop into oven and bake for 20 to 22 minutes

Buy your ingredients from bulk barn so that you only get exactly what you need. 

Quick Tips & Tools:

TOOLS
4 tiny muffin trays OR 2 medium muffin tray. Large bowl. Spatula.

TIPS

Do not over mix.

Take them out when they are lightly brown on top and cooked in the middle.

Saving Time:

Double the batch. Freeze some. And then enjoy them all through out the week / month!
