Polish Fried Cabbage {Kapusta Zasmażana}

Title: Polish Fried Cabbage

Oh how obsessed I am with this recipe!! I first tried it at Thanksgiving dinner at my mother in laws and ever since I have been working to recreate it in a way that holds up to the Polish tradition but has my own flare on it. I think I found the perfect recipe. Hope you get a chance to enjoy it!

Ingredients

1 medium cabbage, sliced this
1 ½ c water
½ tsp salt
1/2 tsp black pepper
2-3 tbsp white vinegar 
5 inches of Kielbasa, diced small (or 5 bacon strips, diced)
1 medium onion, diced
3 tbsp of butter
3 tbsp of all-purpose flour

Instructions

  1. Chop cabbage, as you would to make coleslaw. Place in a medium pot, add water, salt and pepper. Cook cabbage for only about 5 minutes. You want to preserve some crunch. Add vinegar, stir and set aside.

  2. Chop kielbasa (or bacon) and sauté in a separate pan. When the edges start getting a little brown, add diced onion. Sauté together for another few minutes, until nice and golden brown. Transfer into the cabbage mixture, reserving as much fat as possible.

  3. To the now empty pan, add butter and flour to make roux. Whisk while it heats for about 45-60 seconds. Transfer to cabbage mixture.

  4. Turn cabbage to low heat and cook uncovered until some of the water evaporates and it thickens, for about 10-15 minutes.

  5. Taste. Add salt, if needed. Serve hot and with Love

Saving Money:

Use whatever meat you have on hand, or leave the meat out all together. It will still be a delicious side dish without the meat. I use a service called ButcherBox which gives me quality pastured meat for a good price.

1 large fry pan, cutting board, knife

Tips: 

Enjoy as part of dinner, on a bed of potatoes or over top of macaroni. You can also eat it on its own, maybe with a slice of sourdough bread. You can also serve with chicken or as a side to your Thanksgiving or Chrsitmas dinner.

Saving Time:

Use a cheese grated to shred your cabbage, just watch your knuckles. Be careful. You can also use a food processor, that save a whole lotta time. Also, if you slice your cabbage and use it as a meditation, time speeds up, too 🙂
