Sweet Potato and Mustard Turkey Burgers

Title: Sweet Potato and Mustard Turkey Burgers

These burgers are so juicy, so flavorful, so nourishing and a hit for the whole family! I am certain once you make these they will be added to your weekly rotation. You can enjoy these without the bun too, they are so dang delicious my friends!

Ingredients

1lb ground turkey
1/2 cup grated onion
1 cup grated sweet potato
1/2 cup chopped spinach
1/2 cup dijon mustard
1/2 tsp sea salt
1/4 tsp black pepper
1 tsp garlic powder

 

Instructions

  1. Preheat Oven to 375F. Cover a baking pan with parchment paper or tin foil, as a drizzle of olive oil and set aside
  2. Using a cheese grater or grater attachment on the food processor, grate  your onion and sweet potato.
  3. Mix all ingredients together in a large bowl until it is well combined
  4. I used my ice cream scooper, and used two scoops for each burger, equating to about 6 burgers. 
  5. Bake in oven for 25 to 30 minutes until top is slightly golden brown
  6. Serve as burgers, with or without the bun

For Gluten-Free, eliminate the bun and serve with a side salad

Saving Time:

Double the recipe. You can make them ahead of time then store in an air tight container in the fridge. They will stay good for up to 4 days or freeze them for 3 to 4 months.
