Honey Cajun Chicken Fajitas

This is a satisfying protein rich meal that saves on time because it is cooked in one pan. Have it on its own, with corn flatbreads or tortilla chips.
Ingredients
2 chicken breast, sliced
3 peppers (red orange yellow), sliced
1 onion, sliced
1 tbsp chili powder
1/2 tsp coriander
1 tsp oregano
1 tsp smoked paprika
1 tsp cumin
1 – 2 tsp salt
1 tbsp garlic, minced
3 tbsp tomato paste
2 tbsp melted coconut oil
2 tbsp honey
1/2 cup cheese
5 tbsp cilantro
5 tbsp plain greek yogurt
1/2 lime, juice
1-2 avocados sliced.
Flatbread (small flat/round corn tortillas or tortilla chips for dipping)
Instructions
- Preheat your oven to 425 F and put parchment paper on a pan and set aside.
- Slice your chicken into thin even strips, add to a medium sized bowl and set aside
- On another cutting board slice your peppers and onions and add them to the chicken bowl
- In a small bowl mix all the spices together, chili, coriander, oregano, paprika, cumin, salt and then mix in the tomato paste, olive oil and fresh garlic and honey.
- I used my fingers to massage the spice mixture all over the chicken, peppers and onions. Once fully mixed, add to the readied pan
- Pop into the oven for 20 minutes.
- Meanwhile dice up the cilantro, shred the cheese, slice the onions, slice the avocado, toast the corn tortillas on pan with a wee-bit of coconut oil
- When the chicken is cooked through add cheese on top and pop back in oven for another 3-5 minutes.
- Take it out of oven and sprinkle some greek yogurt on top, cilantro, more cheese if desired
I ate mine in a bowl without rice tortilla. But I also love finely dicing the chicken and using tortillas to scoop the honey cajun chicken, yum yum.

Pan for stove, pan for stovetop, knife, 2 cutting boards, medium bowl, small bowl.
TIPS
Have it on its own, with corn flatbreads or tortilla chips.
If you want to make this vegetarian take out a big can of black beans. Rinse them. First slice onion and add to pan on top of stove. After about 10 minutes add the spices mixture to onions, add pepper. Close the lid let simmer. Add black beans, turn it to low and let it mingle all together. Serve in the same way as chicken!
Saving Time:
Pre mix the chicken and the veggies in the morning and let it marinate all day. Whip it out before dinner and add to pan and throw it in oven for a 20 minute meal.
