Avocado & Egg on Toast is our “go to” breakfast option. Especially with a soft boiled egg with coconut oil on avocado and sprouted grain toast mmmm so delicious. There are many morning where I do NOT want toast for whatever reason. In that case, I take cherry tomatoes, cut them in half. I toss them in a bit of olive oil in a fry pan with some salt and once they start to soften and their juices dribble out I add my diced avocado to the pan, mix it all together and serve beside my egg. SOOOOO delicious this is!!!! One no-compromise choice for this dish though is always to get the cleanest healthiest bread (and eggs!) possible. We aim to buy only sprouted grain bread. It is more expensive but for the added nutrition and taste factor its worth it and the price can be balanced out in other areas. Check out the notes below as to what sprouted grain bread we buy.
