Avocado & Egg on Toast is our “go to” breakfast option. Especially with a soft boiled egg with coconut oil on avocado and sprouted grain toast mmmm so delicious. There are many morning where I do NOT want toast for whatever reason. In that case, I take cherry tomatoes, cut them in half. I toss them in a bit of olive oil in a fry pan with some salt and once they start to soften and their juices dribble out I add my diced avocado to the pan, mix it all together and serve beside my egg. SOOOOO delicious this is!!!! One no-compromise choice for this dish though is always to get the cleanest healthiest bread (and eggs!) possible. We aim to buy only sprouted grain bread. It is more expensive but for the added nutrition and taste factor its worth it and the price can be balanced out in other areas.  Check out the notes below as to what sprouted grain bread we buy.

Ingredients

4 Eggs, large & organic
1 Avocado, large and diced
2-4 slices of bread (depends if you like open faced sandwiches or not …. or if someone if using the GF option)
Pinch of Himalayan salt
2 tsp coconut oil
pinch of garlic powder
Hemp Hearts (optional)
1 tsp white or apple cider vinegar [for poached eggs]
For Gluten Free option:
10 cherry tomatoes, diced
1/2 avocado, diced
1 tsp olive oil
Pinch salt

Instructions

There are 2 ways we do these eggs:

Boiled (Tom & Ella’s Fav)

1. Keep eggs in shell and add them to pot of cold water. Turn on stove and bring to a boil. As soon as it boils turn stove off and set timer for 5 minutes. *Leave lid on! 

2. In meantime, toast your sprouted bread. Add coconut oil to toast. Take your avocado cut open avocado by slicing your knife around the middle of the avocado, horizontally, from top to bottom and all the way around. Slightly turn avocado in your hands to open it, take out the pit and mash avocado with a fork in the skin. Scoopp out mashed avocado and add to coconut oil’d toast.

3. Once eggs are boiled, rinse them in cold water and crack them to take them out of shell. Add peeled egg atop the avocado toast and slice them to expose their soft yolk. Add pinch of salt, garlic power and hemp hearts if using. Eat open faced or with another toast on top if your hungry.  Enjoy the simplicity of this delicious breakfast. 

Poached (My fav)

1. Fill medium sized pot with cold water. Bring to boil on stove. As soon as it starts to boil turn stove to Low and add vinegar. 

2. Crack one egg into a glass measuring cup with spout. Slowly pour egg into hot water. If you want 2 (or more) eggs, crack each egg separately into measuring cup and pour egg into water beside other egg. Let them cook with lid off for 4-5 minutes. 

3. Once cooked to your perfect yokiness, take a large spoon with holes to scoop out the egg from water, and place on paper towel or clean cloth to absorb water. Once dry, add it onto your plate beside tomatoes and avocado mix, or on a slice of toast with mashed avocado. Make small slits in top of poached egg to expose yolk and sprinkle salt and garlic powder to the top. If I have left over caramelized onions from night before, I warm those up slightly in toaster oven or microwave  and add on top of egg as well. Not necessary but also delicious. enjoy. 

Saving Money:

The cheapest version here is prbably buying your eggs in bulk and also the cherry tomatoes. Avocado is always a nice luxury but not necessary. As mentioned with the bread… it is still greatly worth the few extra dollar for sprouted grains —->

A website that focuses on an organic healthy lifestyle, Rodales Organic Life says the following about sprouted grain bread:  “Turns out, sprouted bread may be beneficial for people who are mildly gluten-sensitive (not those with full blown celiac disease) or have difficulty digesting regular wheat bread, according to Jen McDaniel, RDN, founder of McDaniel Nutrition Therapy. The process of sprouting grains before they’re ground into flour seems to minimize presence of phytic acid, which may make it a bit easier to digest your bread and absorb minerals like iron and calcium from it,” she says.  “Several studies on sprouted grains—but not specifically sprouted grain bread—have also found that sprouting can increase key nutrients such as B vitamins, vitamin C, folate, fiber, and certain amino acids. “

For Gluten Free Option:
Take cherry tomatoes, cut them in half. SOOOOO delicious this is!!!!

Saving Time:

This is overall a quick breakfast. The fastest version is boiled eggs on toast for sure. Especially becuase if you set a timer you can do other things like prep toast or clean while its boiling
