Glazed carrots are always a crowd favorite!!! They are super easy to make, nourishing and so dang delicious. I love these carrots especially on holidays to add color and deliciousness to the plate. But feel free to make them any day of the week as a side dish your whole family will love. Concerned about the sugar ? Use olive oil and salt. You will still have delicious carrots with out the added sweetness.

Ingredients

1 kg / 2 lb carrots , peeled and cut diagonally
1/8 cup  coconut sugar , loosely packed
1/8 cup raw honey
2 garlic cloves , minced
2 tbsp butter, melted (or olive oil)
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Parsley , for garnish (optional)

Instructions

  1. Preheat oven to 400F
  2. Cut carrot on the diagonal into  1.75” lengths. Halve thicker end so they are all roughly the same width.
  3. Toss in a bowl with sugar,honey, butter, garlic, oil, salt and pepper. Pour onto tray, spread out.
  4. Roast 15 minutes.
  5. Move the carrots around, then roast a further 10 to 15 minutes until soft and caramelized on the edges with plenty of glaze left on the tray.
  6. Toss carrots in the glaze, sprinkle with parsley if using. Serve warm.

Saving Money:

Carrots are super budget friendly. If you are unable to get Raw Honey, do not use honey. Regular honey is not the same. Use only coconut sugar ( you can buy in bulk from bulk barn, the exact amount you need). You can also use brown sugar if that is all you have.

Tips:

Saving Time:

There are not many options to cut down on time here, except for slicing the carrots diagonally ahead of time and storing in closed container in fridge until you are ready to use.
