Broccoli and Cheddar Sandwich

With only 4 ingredients, this sandwich is loaded with vitamins and deliciousness! Its the perfect lunch or side dish. I used 1 whole head of broccoli and served up 2 sandwiches from it. To keep your nutrition in line, ensure that you use sprouted grain bread.

Ingredients

2 tbsp coconut oil

4 slices sprouted grain bread

8 slices of cheese (or vegan cheese)

1/2 broccoli (2 cups diced super small)

pinch of salt

1 green onion / chive (optional)

 

Instructions

  1. Wash your broccoli. Take it to the cutting board and shave the top of the broccoli so it becomes tiny  little pieces of broccoli. Continue to shave the broccoli pieces until you get to the stems and stop.

  2. Add coconut oil to the outside of 4 pieces of bread

  3. On the inside pieces of the bread,  on one side put the cheese and on top of it add the chives if using, and then the broccoli shavings on top. Sprinkle salt

  4. Put other peice of bread on top.

  5. Use either a Panini press, George foreman grill or a hot pan and the use of a small glass plate on top of bread to push it down.

  6. Let sit for 3 minutes (flip side if you need to) and another 2 minutes on the other side. Make sure its slightly toasted and cheese melted.

Saving Money:

This is a super budget friendly sandwich.

Tips: 
Make sure you use sprouted grain bread. Our favorite brand is
Stonemill. 
 
Also use any cheese that you like. We love cheddar, but you can also use Nutritional Yeast or Vegan daiya cheese.

I love using my panini press. Honestly saves me time in heating my pan and in clean up!
